Origin of Kalari: Kalari is the variety of cheese that arose as an indigenous solution to sour milk. In the past, when mountains would take days to be traversed, the nomads and paharis were unable to sell their fresh milk on time. This problem led to the discovery of Kalari, which would stay fresh for weeks and pose no problem.
